Work in the amazing and diverse Normandy!

The opportunity at the Chateau for all our Commis Chefs is unique – serving large volume foods to educational groups, whilst at the same time plating quality French food for adults.
 
You will also take control of the staff food menu for 1 week in 4, giving you the opportunity to prove your planning and cooking skills in equal measures.

As a Commis Chef at the chateau you will be part of a small kitchen team that produces over 60,000 quality meals per season. Reporting to the Head Chef you will work with 2 other chefs and produce high quality food for which the Chateau is well known.
 
You will also have the chance to impress the staff with your cooking skills during the rotational staff menu week – each chef takes it in rotation (4 weekly) to write and produce a full staff menu which should be balanced and on budget. 

You will also be responsible for the upkeep of all the legal paperwork and HACCP procedures as well as involved with order control, stock rotation and stock taking. 

Requirements

Good customer facing skills as well as kitchen skills are a must – you will be taking part in customer facing food activities such as BBQ’s, Crepe & Cidre nights, Cheese Tasting, etc.

Previous work with volume catering is an advantage, but a well organised and well-rounded chef in the basics is favorable. You should have a good solid knowledge of allergy and dietry menus and be happy to work with children.
