Description
Talented, experienced imaginative organised chef required in the Alpe d'Huez this winter. Small hotel maximim 51 covers.
Our Chef is responsible for the overall running of the kitchen, including providing delicoius, beautifuly presented, modern food, maintaining high standards of hygien working to a budget, stock control, and ordering The Hotel Manager will provide French language assistance if needed.
Main responsibilities
- Plan & cook meals to a high standard and within budget, including on a daily basis, breakfast, evening meal, afternoon tea, apres ski snack menu, packed lunches are offered for sale. Also lunches, on Saturdays and some other occasions.
- Write out the daily set menu
- Plan special events, from time to time e.g. on-piste picnics, BBQ's, theme evenings, birthdays
- Hygiene & safety within the kitchen, informing all other staff of the kitchen rules & regulations
- Order all kitchen supplies & keep various order/accounts books
- Monthly stock takes and working out the food budget and profit margins at given intervals (with the Manager)
- Train the Assistant Chef to cover when the Head Chef is absent
- Organise staff food
Requirements
Previous experience of working in a similar role is essential and a basic knowledge of French is an advantage.
